Ingredients
1 chicken breast per person (pp).
1 tbls mozzarella or soft cheese.
2 tsp green pesto pp.
1 tbls mayonnaise pp.
1 ciabatta roll pp.
rocket or other lettuce.
Instructions
1. Cut a slit in the side of a chicken breast. Fill with 1tsp of the green pesto and the cheese.
2. Wrap the chickeni in foil and bake for 40mins in a hot oven.
3. Mix the remaining pesto with the mayonaise.
4. Cut open the warm rolls, and spread the mayonnaise onto both sides, top with rocket or lettuce.
5. Place the hot cooked chicken inside the roll (the mozzerella would have melted).
This is lovely served on its own for lunch, or with potato wedges for a main meal.
