Crispy pork escalopes

Ingredients

•75 gram(s) breadcrumbs - fresh or shop-bought •30 mls frozen parsley •4 x 100g (3½oz) pork escalopes •30 mls wholegrain mustard •45 mls olive oil

Instructions

1.Put the breadcrumbs into a shallow bowl and toss through the parsley and some seasoning. 2.Working on one at a time, put an escalope on a board, lay a piece of clingfilm on top and flatten out with a rolling pin to an even thickness of ½cm (¼in). Repeat with the remaining escalopes. Brush both sides of each escalope thinly with the mustard, then cover with the breadcrumb mixture. 3.Heat half the oil in a large frying pan until hot. Add the pork and fry for 3min. Add remaining oil, then turn the pork and fry for another 3min until cooked through and golden. Serve with new potatoes, mixed vegetables and lemon wedges to squeeze over.
