mustardy beef toad in the hole

Ingredients

1 pack of beef and horseradish sausages 8 oz plain flour 4 eggs 8 fl oz whole milk 1tbls english mustard 1 large red onion 2tbls brown sugar splash of balsamic vinegar drizzle of olive oil

Instructions

1. Thinly slice the red onion and lay in a oven proof dish. drizzle with oil, balsamic and sprinkle over the sugar. 2. cut up the sausages and lay on top of the onion, bake for 20mins. 3. beat up the eggs, add the flour and mix, then the milk a little at a time. stir in the mustard and season to taste. 4. pour the batter over the sausages and bake for a further 35mins until risen and brown. I serve with mashed potatoes, peas and red onion gravy.
