Orange Loin Chops

Ingredients

Lean loin chops chopped onion whole orange orange juice stock cube water/cider/white wine

Instructions

Sear the seasoned chops in a hot pan, both sides. Place in an oven-proof dish in a medium oven, then fry the onions in the same pan with a smidgin of oil. Slice your orange thinly (yes, rind and all) and throw into onion pan. Cook for a bit longer then add orange juice (freshly squeezed or from carton), water, cider or white wine and stock cube till a not too sloppy sauce is achieved. Simmer for a bit longer still, then slosh all over chops and return to oven for 20-30 mins. Serve with creamy mash and veg of your choice. If you're feeling flash, a dash of brandy before the liquid is added and then set fire to pan to flame the dish amid lots of oohs and aahs from dinner guests!
