Ingredients

500g piece beef sirloin, fully trimmed Salt and ground pepper to taste 1-2 Tbsp oil 4 thick slices bread, toasted 4 tsp butter or margarine 20g fresh lettuce, rocket or mesculun 1 red onion, peeled and sliced thinly into rings 16 slices tomato 16 rounds cucumber, finely sliced 100g good quality aioli or mayonnaise

Instructions

Method Pre-heat the oven to 190°C. Heat the oil over a moderate heat in a heavy-based pan and brown the beef thoroughly. Transfer to the oven and roast for 10-12 minutes or until cooked to your liking. Remove from the oven and rest, covered in a warm place for a further 5 minutes, before carving thinly across the grain. To Serve Lightly butter the bread. Assemble the salad greens, onion, tomato and cucumber, and sliced beef. Drizzle with aioli and season to taste. Serve warm with mustard or gravy as desired. Seal the cut sides of bread with butter or a mayonnaise-based spread, then add a layer of greens to prevent the meat juices from soaking into the bread.
