Ingredients

Ingredients 4 x 200g beef strips 1-2 Tbsp oil Dressing 5 Tbsp fish sauce 1 Tbsp sugar 5 Tbsp freshly squeezed lime juice 1 tsp each minced fresh garlic, ginger Combine all ingredients in a clean bowl and set aside Salad 1 red onion, peeled and finely sliced 2 spring onions, finely sliced ¼ cup each fresh coriander, mint, basil 1 red pepper, seeded and finely sliced 1 yellow or green pepper, seeded and finely sliced 8 button mushroom, sliced Fresh red chilli, finely chopped, seeds removed, to taste (optional) 1 small cucumber, peeled and finely sliced Combine all salad ingredients except cucumber in a clean bowl and set aside Garnish (optional) Sprigs of fresh mint and coriander

Instructions

Method Heat oil over a moderate heat in a heavy-based pan and cook steaks 2-3 minutes per side or until cooked to your liking. Rest, covered in a warm place for a further 5 minutes, before carving each steak thinly across the grain. Add a little dressing and marinate beef while still warm. To Serve Arrange overlapping slices of cucumber in an open circle in the centre of each plate. Add any leftover cucumber to the salad. Toss salad ingredients with warm beef and remaining dressing and pile into the centre of the cucumber rings. Garnish if desired and serve. Serves 4-6
