Our Mutton can vary from 4-6 years old in age whereas a Cull Yew or Cull Yaw Mutton are elderly ewes that are no longer able to reproduce usually of the age of about 7-9 years. Like a bottle of fine wine, lamb and mutton meat gets so much better with age simply because the older the animal the more they have worked their muscles over a longer period of time which helps to develop that all-important marbling for the ultimate flavour and tenderness - you can see why Cull Yaw Mutton is making a comeback.
